3/4c butter/margarine
2 large egg whites
2t vanilla extract
1 - 15oz chickpeas, drained and rinsed
2c chocolate chips
2c all-purpose flour
1/2c old-fashioned oats
1t baking soda
1/4t salt
Mix sugar and butter. Beat in egg whites and vanilla, then chickpeas and chocolate chips. Add flour, oats, baking soda, and salt, and mix on low speed until a thick dough forms.
Drop by tablespoonful onto baking sheet. Press gently with a fork to flatten.
Bake until the cookies are brown and just set, 11-13 min at 350.
Tips:
- Can add 3/4 walnuts and/or raisin
- Taste good frozen too
- Can be dairy-free just using dairy-free chocolate chips and vegetable spread
